National Soup Month

January is national soup month!

Celebrate national soup month by staying warm and healthy both on and off the greens.

Our team has put together a list (recipes included) of healthy and tasty soups that you can make to take the chill off!

Lentil Vegetable soup is the perfect winter soup. When colds and the flu are rampant, this soup not only warms you up but provides you with the proper nutrients you need to ward off a virus. Giada De Laurentiis’ version of this lentil, vegetable goodness, is our favorite recipe thus far.

If you are not a lentil fan, the next best vegetable soup is minestrone. Minestrone is the perfect all-season soup, meaning it is delicious no matter what the season. During the summer months you can make lighter minestrone with summer vegetables; alternatively, during the colder months, you can make minestrone with in season winter vegetables and beef up the soup with hearty legumes. Our favorite healthy version of Minestrone is Ellie Krieger’s version, which includes low-sodium chicken broth and low-sodium legumes.

The list would not be complete without the classic Chicken Noodle Soup. Paula Deen’s “Lady’s Chicken Noodle Soup” is our favorite go-to recipe for the classic soup. For a healthier option, we nix the heavy cream and parmesan.

Looking for a creamier soup? Roasted Tomato soup is our go-to soup for a creamier yet healthier option. Tyler Florence’s version of creamy roasted tomato soup is sneakily healthy but does so by not compromising the flavor.

Do you have a delicious soup recipe you’d like to share? We’d love to know about it!
