Raw Vegan Energy Bars with Walnut, Chia, Cherry & Pepita
Who doesn’t want more energy? Healthy energy boosting items is what every on-the-go athlete (and human for that matter) is looking for! Well, we can take that one step further and make it so that you want be breaking the bank! Below is a delicious recipe, which we discovered (and posted) on Pinterest. This tried and true recipe has to be the best granola bar that has been made to date.
1 cup raw walnuts or any other nut of choice
1/2 cup dried cherries (substitute pitted dates, figs or prunes)
1/3 cup just nuts peanut or almond butter
2 heaping Tbsp chia seeds
- 1 Tbsp honey or pure maple syrup
- 1/4 cup raw pepitas (pumpkin seeds)
- 1/4 cup unsweetened, desiccated coconut
You can easily play around with different ingredient choices as desired. Local ingredients are always the best!
Once your ingredients are in place it will take you about 6 minutes to assemble these glorious bars.
